I downloaded and installed FAF on a local server, to test it out and learn how to use it before installing on a regular server, when I realized that the entire wiki is blanked out, meaning I have to re-edit everything back in.
This could be toleratable...if the instructions for editing the wiki haven't also been blanked out as well. My goal was to use the same guide as yours as a template, to make it unique, but it seems that this template wasn't bundled in the package.
Is there any solution to this? Any guide to learn how to create tables and Headers (I know how to make new wiki pages and create hyperlinks between wiki pages).

Strange, I see all the files. I also see the 12 duplicate "Table of Contents" I made as a way to duplicate the Table of Contents you already have. I also see a couple of files that can get linked, but not all.
So, the files are there, but they don't seem to actually be hyperlinked or be recalled when somebody wants them. Instead, it assumes the page is blank.
EDIT: The pre-made Pages that are linked to the Main Page (that I had created by hand) are...
Introduction
Protection
Bazaar
Clans
Market
Attacking
Building
Bank
Messaging
Profiles
Vacation
Bounties

Hm. This error message might explain what is going on. If only I can understand it.Warning: mkdir() [function.mkdir]: No such file or directory in C:\xampp\htdocs\faf\lib\ewiki.php on line 5674

Ah, got it now. The problem is that your web server isn't setting the TEMP environment variable, and the default, /tmp, doesn't exist on a Windows system.
To fix this, please create a temporary directory (say, C:/tmp, or maybe one already exists, like C:/windows/tmp).
Then change line 202's "/tmp" to "C:/windows/tmp". Let us know if that works.
